The Florentine variation of crustless quiche is packed with spinach and sun-dried tomatoes. It's a great vegetarian option. The complete recipe, with details on squeezing the spinach dry, and air frying steps are here.

  1. 01Cook the spinach (microwave for 1 minute or wilt in a pan). Squeeze out as much water as possible using a clean kitchen towel. Then squeeze again. Then once more.
  2. 02Whisk eggs, cream, milk, salt, nutmeg, and pepper.
  3. 03Scatter spinach, sun-dried tomatoes, garlic, and half the cheese in the pan.
  4. 04Pour custard. Top with remaining cheese.
  5. 05Ready for the air fryer.
The three-squeeze instruction is not a joke. Spinach holds an absurd amount of water. One light squeeze leaves enough moisture to ruin the custard. Wring it out like a wet rag. You'll be shocked how much liquid comes out the second and third time.
