North Indian samosas are the classic potato-pea version you find most often. Ajwain seeds add a subtle, thyme-like note to the dough. Get our complete recipe and learn how to achieve crispy, non-greasy samosas.
Ingredients
For the dough:
1 cup all-purpose flour
2 tablespoons oil or ghee
1/4 teaspoon salt
1/4 teaspoon ajwain seeds (carom seeds, optional but traditional)
1/4 cup cold water
For the filling:
2 medium potatoes, boiled, peeled, and roughly mashed (not smooth, chunky is correct)
01**Dough:** Mix flour, salt, and ajwain. Rub in the oil with your fingertips until the mixture looks like coarse sand. Add water gradually and knead into a firm, smooth dough. Not soft like bread dough. Firm. Cover and rest 20 minutes.
02**Filling:** Heat oil in a pan. Add cumin seeds and let them crackle (5 seconds). Add the mashed potato, peas, and all spices. Cook for 2 minutes, stirring. Add cilantro. Cool completely.
03Divide dough into 4 balls. Roll each into an oval. Cut in half. Each half-circle forms one samosa.
04Form a half-circle into a cone shape by folding one straight edge over the other and sealing with water. Fill the cone with 2 tablespoons of filling. Seal the top edge with water and press firmly.
05Ready for the air fryer.
06Serve with tamarind chutney and green mint chutney.
The dough must be firm, not soft. Soft dough absorbs oil and makes greasy samosas. The ajwain seeds add a subtle thyme-like flavor that's hard to identify but unmistakable once you know it. The filling should be chunky mashed potato, not smooth. You want texture in every bite.
