Preheat air fryer to 300°F.
Core the apples and slice them as thinly as possible, ideally with a mandoline.
Toss the slices lightly with cinnamon or your chosen spices.
Place in the basket in a single layer, or slightly overlapping.
Cook for 20 minutes, flipping every 5 minutes to prevent burning.
Remove and let cool on a wire rack to crisp up further before serving.
