Butter naan is richer and more decadent than the base recipe. The difference is generous ghee: melted ghee mixed into the dough, plus a brush of melted ghee over the finished bread. You'll get complete instructions, including air frying times, right here.

For finishing:

  • 3 tablespoons ghee, melted
  • Flaky salt

This variation is self-seasoned
  1. 01Mix flour, yeast, sugar, salt, and baking powder.
  2. 02Add yogurt, warm milk, and ghee. Knead for 4 minutes until smooth.
  3. 03Cover and let rise for 1 hour.
  4. 04Divide into 4 pieces. Roll into ovals, 1/4 inch thick.
  5. 05Ready for the air fryer.
  6. 06The moment each naan comes out, brush both sides generously with melted ghee and sprinkle with flaky salt.
The double ghee (in the dough AND brushed on after) is what makes restaurant naan taste different from homemade. Most home recipes skimp on the finishing ghee. Don't. It should be glistening. The warm milk instead of water makes the dough slightly richer and softer than the base yogurt version.
