Clams Casino is a baked clam variation with bacon, peppers, and shallots. The bacon is cooked into the breadcrumb mixture for a smoky, savory flavor. Here you'll get the full recipe and air fryer directions.

  • 12 littleneck clams, shucked (save half shells)
  • 4 slices bacon, diced small
  • 2 tablespoons butter
  • 1/4 red bell pepper, finely diced
  • 1/4 green bell pepper, finely diced
  • 1 shallot, finely diced
  • 1 clove garlic, minced
  • 1/4 cup plain breadcrumbs
  • 1 tablespoon fresh parsley, chopped
  • squeeze lemon juice
  • pinch salt and pepper

This variation is self-seasoned
  1. 01Cook the diced bacon in a skillet until just starting to crisp. Remove and set aside. Leave the fat in the pan.
  2. 02Add the butter to the bacon fat. Saute the bell peppers, shallot, and garlic until soft, about 3 minutes.
  3. 03Remove from heat. Stir in the breadcrumbs, parsley, lemon juice, and the cooked bacon.
  4. 04Chop the clam meat roughly. Mix into the filling.
  5. 05Spoon back into half shells. Mound generously.
  6. 06Ready for the air fryer on a foil-nest rack.
Clams Casino is the only version where the bacon is cooked into the filling rather than laid on top. The bacon fat replaces some of the butter and olive oil, giving the breadcrumbs a smokier, richer flavor. The bell peppers are the signature. Without them, it's just baked clams with bacon.
