Achieve a perfectly cooked steak with a beautiful crust in your air fryer. This method works best with ribeye, NY strip, or filet mignon. Find all the steps, timing, and temperature recommendations here.

  • 1 to 2 steaks (ribeye, NY strip, or filet mignon, 1 to 1.5 inches thick)
  • Oil spray or 1 teaspoon oil
  • Salt and pepper (season very generously, more than you think)
Pairs with Simple Salt & Pepper, Chimichurri Dry, Herbed Garlic Butter, or Smoked HickorySee all seasonings →
  1. 01Take the steak out of the fridge 30 minutes before cooking. Room temperature steak cooks more evenly.
  2. 02Pat very dry. Moisture on the surface steams instead of searing.
  3. 03Season both sides generously with salt and pepper. Good steak doesn't need more than this.
  4. 04Spray or rub with a thin layer of oil.
  5. 05Ready for the air fryer.
  6. 06Rest for 5 minutes after cooking. This is non-negotiable. Cut it early and the juices run out onto the plate.
Internal temperature targets: 125°F rare, 130°F medium-rare, 135°F medium, 145°F medium-well. The steak continues cooking during the 5-minute rest, so pull it 5 degrees before your target. A $15 instant-read thermometer is the difference between a perfect steak and an expensive mistake.
