Conch fritters are a Bahamian staple, and the air fryer makes them surprisingly easy to prepare. Finely diced conch meat is mixed with a simple batter and air fried to crispy perfection. The recipe details the ingredient list, instructions, and tips for tender fritters.

  1. 01Dice the conch meat very fine, almost minced. Conch is chewy. Small pieces distribute better and the fritter holds together.
  2. 02Mix the flour, cornmeal, baking powder, and salt in a bowl.
  3. 03Beat the egg with the milk and lime juice. Add to the dry ingredients and stir until you have a thick batter.
  4. 04Fold in the diced conch, celery, bell pepper, green onion, garlic, and cayenne.
  5. 05Drop rounded tablespoons of batter onto a plate or parchment. These don't need to be shaped perfectly. Rustic is fine.
  6. 06Refrigerate for 15 minutes to firm up.
  7. 07Ready for the air fryer.
Conch meat is tough by nature. Dicing it fine is the key to a fritter that isn't chewy in the middle. If you can find tenderized conch, even better. The lime juice also helps break down the proteins slightly.
